This is such a good starter guide for taking kids outside and in nature to learn. It expresses the health benefits, how to form lessons and general reasons why students, youth and the teacher should spend time outdoors. It is created by the David Suzuki Foundation which I also highly recommend checking out for their teacher and student resources.

“Time in nature can reduce stress and symptoms of attention-deficit disorders while boosting immunity, energy levels and creativity. Studies show that time outdoors, especially unstructured time in more natural settings, can increase curiosity, creativity and problem-solving ability.”
